Djaj Lmhemer (roasted chicken) is a tasty Moroccan meal. It is considered among the prestigious dishes that Moroccans serve their special guests. In weddings, special ceremonies and festivities, people prepare it as a basic meal. Nowadays, people prepare it more often as a regular dish for lunch. With bread and some salad they can be unbelievably delicious and rich meal.
This recipe will take you to enjoy an irresistible tasty roasted chicken meal in simple method
Ingredients (for 4 people)
1 whole chicken with its lever
1small cup of oil and olive oil
3 tsp salt
1 tsp ginger
½ tsp turmeric
½ tsp ground black pepper
Few saffron stamens, soaked in cold water
3 cloves of minced garlic
1 lemon juice
1 pickle lemon
2tbsp minced parsley and coriander
50gs red olives
1 tbsp butter
Way of preparation
Clean the chicken and lever well and soak it in water with salt and vinegar at least for 2 hours.
In a bowl mix a cup of water, ginger, turmeric, garlic, lemon juice, saffron, black pepper, parsley and coriander.
Clean the chicken again very well and strain it from water then marinate it in the mixture of spices (inside and outside) and let it at least for an hour.
Put the pot on the stove and add oil, onions and cook them for a while.
Add the chicken and the spices and mix them well then add 1.5 litters of water and let cook for 45 minutes.
When the chicken is cooked, take it out from the pot and add lever into the pot and keep stirring till the gravy becomes thick.
Grease the chicken with butter and put it in the oven till it is well grilled.
Finally, in a plate put the grilled chicken in the middle and add the gravy with lever and put some slices of pickle lemon above the chicken with olives.
Serve hot with bread!
