Tinejdad, Morocco- Sellou or Zmita is a very nutritious Moroccan dish prepared during the holy month of Ramadan. Sellou is flour-based dish made from various rich ingredients like all the types of nuts, honey, sesame, and other herbaceous seeds that add irresistible flavour to the dish. Sellou is eaten by small spoons and usually served with tea or other hot beverages. This recipe will take you in easy steps to prepare this authentic Moroccan dish that you may share with your family and loved ones.
Ingredients
1 kg white flour
500g almond
500g sesame
2tbsp anis
2tbsp fennel seeds
1tbsp ground cinnamon
200g ice sugar
1/2 cup honey
200g butter
1 litter of oil
Way of preparation
put flour in a pan and grill it in the oven or on the stove till its colour becomes light brown.
Take a half cup of sesame and keep it aside, then ground well the rest in a blender.
Boil almonds and peel them, then fry them slightly.
Take a half cup of fried almonds and keep it aside and ground almonds to small pieces not powder.
Grill anise and fennel seeds and ground them well.
Heat oil and butter on the stove and let it cool down for a while.
In a big bowl put all the dry ingredients except the half cup of almonds and mix them well, then add the heated oil slowly using hands or a spatula until the ingredients are cohesively mixed then add honey and mix again for a while.
Put Zmita in a plate and decorate it with the grilled almonds and serve it with Moroccan tea.
