Harsha is semolina based bread. The majority of Moroccans prepare it for breakfast or evening snack. It is usually served with butter, honey, or cheese and of course with Moroccan mint tea.
It is very delicious, simple to prepare and does not take much time to cook. For those who do not have enough time to prepare it, they always can get some at any near restaurant early in the morning or at the evening, but the home made is no doubt much better!
Harsha cooked on the stove.
Ingredients :
500g of fine semolina.
50g butter.
2 tbsp granulated sugar.
1 baking powder.
1 tsp vanilla.
Some salt to taste.
½ cup oil.
½ tsp baking yeast.
Water for the dough.
Way of preparation
1. In a bowl, put semolina, and the dry ingredients; then add oil and butter and mix well with your hands till all the ingredients become grainy.
2. Add water little by little and mix till you get cohesive and moist dough.
3. Let the dough rest for 20 minutes until the dough is dry (all the water is absorbed).
4. On a low fire put a none stick pan or a skillet (in Morocco there is a special pan for Harsha and Melwi called Ouajda pan).
5. Make small balls from the dough or make a big one using semolina on the working surface, then flatten with hands until you get a thick disc.
6. Put Harsha on the hot pan and cook over a low heat on both sides.
7. Serve with honey, jam or cheese and of course with Moroccan tea.
Harsha baked in the oven
Ingredients :
500g fine semolina.
½ liter of milk.
100 g granulated sugar.
¼ cup oil.
2 baking powder.
1 tsp vanilla.
½ tsp baking yeast.
½ tsp salt.
Way of preparation :
1. In a bowl, mix semolina, vanilla, sugar, baking powder, oil, and baking yeast then mix well.
2. Add milk gradually mixing with hands until it becomes a smooth and soft paste (it should not be hard).
3. Shape the dough into a ball.
4. Put a little semolina in a greasy pan.
5. Place the ball on the pan; flatten with the palm of hand.
6. Bake in a moderately hot oven until Harsha becomes golden brown.
For garnish: ( optional)
Put some honey on the top and slices of almonds or grated coconuts.
