It is one of the renowned Moroccan dishes that many generations have passed on for a long time. It is characterized by the simplicity of its ingredients and the fluffiness of its texture. Baghrir is found on every table during Iftar in the holy month of Ramadan.
Baghrir is a simple meal that doesn’t require a lot of time and effort to make. Use these simple ingredients, along with the following steps.
Ingredients
1 cup of fine semolina
Half a cup of plain flour
Two teaspoons of baking powder
A small spoonful of active-dry yeast
1/4 teaspoon salt
1/4 teaspoon sugar.
Two cups of warm water
How to prepare:
Put all the ingredients; flour, semolina, water, sugar, and salt except for baking powder in a blender, and mix well until the ingredients are combined.
Add baking powder and run the blender again on medium speed.
Pour the mixture into a bowl, cover with a clean towel or plastic wrap, and leave it in a warm place for 30 minutes.
Heat a non-stick frying pan over medium heat, and grease it with a little oil. Stir the dough, then pour ¼ cup of the dough into the pan. When bubbles appear on the top side and it dries out, it is cooked. You don’t need to flip it.
Repeat the previous steps with the rest of the dough. Do not place the Baghrir on top of each other, otherwise, they will become sticky. Place them separately on a clean kitchen towel.
Put the Baghrir in a serving dish, and serve it for breakfast with honey, jam, butter, or chocolate.
2 – Moroccan “Khlea” and Eggs Tagine

Moroccan Khlea also called “qadeed’’ is one of the most common traditional dishes in Morocco. Moroccan Khlea is a preserved meat made from beef or lamb. It is salted, marinated in cumin, garlic, other spices and dried in the sun.
These tasty meat strips are served as a main dish and in many ways with eggs.
Ingredients
4large eggs
150 g Moroccan Khlea
Salt and black pepper
How to prepare:
Add the khlea to the Moroccan tagine, place over medium heat and let it sit for 30 seconds until the grease melts.
If you don’t have a Moroccan tagine, use a frying pan.
Add the eggs.
Add salt and black pepper to taste.
Gently stir the eggs, then cook on low heat for four minutes, until the eggs are completely cooked.
Serve the tagine hot for breakfast with Moroccan bread, and mint tea.
3 – Moroccan “Harcha”

Moroccan Harsha is a famous semolina bread, recognized for its golden color and softness. It is prepared with simple ingredients and stuffed with sweet or salty fillings; chocolate, jam, or cheese.
Ingredients
2 cups fine semolina
3 tablespoons of sugar
2 teaspoons baking powder
¼ teaspoon salt
125gm melted butter
1 teaspoon olive oil
¾ cup milk
How to prepare
In a bowl, combine the fine semolina, sugar, baking powder, and salt and stir well.
Add the butter, olive oil, and stir until the ingredients are well combined.
Add the milk and stir until the dough is soft.
Form dough into balls and place on a plate, cover with a clean kitchen towel, so they do not dry out, and set aside for a few minutes.
Heat a non-stick frying pan over medium to low heat and press each ball into a disc.
Cook the Harsha over low heat for 5-10 minutes on each side, until golden brown and the Harsha is ready to be enjoyed.
You can serve it with jam, butter, honey, cheese or chocolate.
