If your destination this summer is Morocco, then you have picked the perfect place to visit. When it comes to summer food, Morocco does it best. Its diverse cuisine and nutritious meals that will keep you refreshed all summer long and will get you through the Moroccan heat.

1. Moroccan salad

If you’ve ever been to Morocco, you know that the Moroccan salad is a must in the summer.

When it comes to salads, it is considered a staple for Moroccans in restaurants and households. It is mostly eaten as a side dish before the main course.

One of the main reasons why this salad is adored all over Morocco is because of its refreshing flavor and easy to make recipe that consists of finely cut cucumbers, tomatoes, onion, salt and vinegar, and sometimes even feta cheese. 

2. Fruit bowl

Moroccans love to eat fruits, especially after a big meal or a gathering with friends and family. Fruits are an important part of Moroccan eating habits and diet and are often thought of as part of the traditions of hospitality here in Morocco.

The perfect way to eat fruits in the summer is by adding cold orange juice to a bowl of seasonal fruits cut into cubes, such as strawberries, peaches, mangoes, pineapples, blueberries, and more. It is the best treat on a hot summer day.

3. Bocadillos

A Moroccan must have food in the summer is bocadillos, or sandwiches. While sandwiches are a popular food around the world, Morocco does things a little bit differently. Bocadillos are known in the north of Morocco, mostly in Tetouan and Tanger, as a special and beloved delicacy.

Bocadillos are mostly eaten at the beach after a good swim, paired with a refreshing soda that will quench your thirst on a sunny beach day.

The Moroccan sandwich mostly consists of a baguette that gets sliced in half and stuffed with deli meat, tuna, tomatoes, onions, pickles, fries, and eggs, along with different sauces such as ketchup, mayonnaise, and hot sauce.

4. Barbecued kebabs

When most people think of barbecue they don’t automatically think of Morocco but rather the American style BBQ with a brisket and vegetables on the side.

However, in Morocco we eat more of the middle eastern style kebab that consists of either chicken, lamb or kafta, a kind of seasoned ground meat. Your choice of protein then gets cut into big cubes and put into a bowl together with olive oil, salt, lemon juice, cumin, paprika and garlic powder. Each piece of meat is sandwiched between onions, peppers and tomatoes to make delicious skewers with an infusion of sweet and tangy flavors. You can pair your kabab with Moroccan bread on the side to complement the strong taste.

5. Macaroni salad

Another staple for the summer is the classic macaroni salad. It gives you a boost of energy and protein to get you through the day. This salad can also be a perfect appetizer for a nice picnic or a beach day.

Macaroni salad is very simple and easy to make, even if you’re not an experienced chef. All you have to do is boil macaroni and add it to a bowl with chicken or tuna, depending on your preference. For the vegetables, you will need chopped onions, cherry tomatoes, and corn. Finally, when it comes to sauces, the world is your oyster, but most people use mayonnaise with a sprinkle of salt and pepper.

6. Fish platter

If you happen to be a fish lover, then you have come to the right place. One of the foods Morocco is best known for is their fish platters, which can be found in almost any restaurant near the beach. 

When going to these restaurants, you can order as much fish as you would like, from fried calamari to prawns, sole, sardines, anchovies, or any combination that your heart desires. They will all be served fresh with a side of tomato sauce, fries, and Moroccan bread.

These restaurants not only offer fresh fish for you to enjoy, but they also provide an amazing dining experience and a beautiful view of the beach for you and your family to remember for days to come.
