Fes – Sardines and fish dishes in general are famous only in coastal cities in Morocco, but very common in the Moroccan cuisine.

Tangier, Rabat, Essaouira and Agadir to name few are the Moroccan cities where one can enjoy various mouth watering dishes of all the different kinds of fish precisely sardines.

However, people in the South-East regions of Morocco didn’t use to eat fish because there was a cultural belief considering fish Jewish food par excellence therefore Muslims are not allowed to eat it, the same thing with eggs and tomatoes. But, nowadays, when sardines are proved to have many health benefits many families prepare them with different methods.

Today, we will take you in easy steps to discover one of the famous way that Moroccan families use to prepare sardines.

Ingredients:

1 kg Sardines.

1 onion.

2 potatoes.

2 tomatoes.

1 green pepper.

2 chili peppers

1 lemon.

2 tbsp chopped coriander.

2 tbsp chopped parsley.

4 cloves of garlic.

1 tsp salt.

 1 tsp cumin.

1 tsp paprika.

1 tsp ginger.

½ tsp black pepper.

½ tsp turmeric.

Juice of one lemon.

½ cup oil and olive oil.

Way of preparation

  1.  Remove the scales from sardines, and then clean them well.
  2.  Put the sardines in a colander and squeeze a lemon on them.

For Chermola (sauce)

  1. In a bowl, put parsley, coriander, minced garlic, salt, oil, lemon juice and all the spices and mix well.
  2. Cut potatoes into discs and boil them for 5 minutes.
  3. Cut all other vegetables in the form of discs except chili pepper.
  4. In an oven tray, place onions, potatoes and tomatoes respectively then put some Chermola above them.
  5. Place half of sardine on the top and put chermola again on each sardine then cover with the rest of sardines.
  6. Add hot pepper, chili peppers and lemon in disc shape on the top and pour the rest of chermola on the top.
  7. Cover the tray with aluminum paper then put it in the oven and cook for half an hour or more. (Make sure vegetables are well cooked).

Serve hot with bread and some salad.
