Moroccan Cuisine: a recipe for Sefenj (Doughnuts)

Taroudant- Sfenj is a traditional Moroccan pastry made usually by white flour in Moroccan cuisine. Like American doughnuts, Sfenj is a sticky dough in the form of a ring, deep fried until its color becomes light golden.

Sfenj is usually served hot with mint tea for breakfast and some people like to prepare it as an evening snack. Also it looks extremely irresistible with its blown spongy shape, and golden color.

However, if you can’t make it yourself, you can find it available in early morning at “Sfenji shops,” small restaurants that serve only tea and Sfenj in Moroccan old medinas.

This recipe will show you how to make your own Sfenj at home in very easy steps.

Ingredients:

500g white flour.

15g baking yeast.

½ tsp salt.

Warm water.

Oil for frying.

Way How to prepare Sfenj in Moroccan Cuisine?

  1. In a big bowl mix the dry ingredients, add water little by little and knead to get soft, elastic and sticky dough.
  2. Cover the dough with a clean cloth and let rise for 2 hours or more (it depends on the outside temperature).
  3. In a wide and deep pot put oil and heat it until it becomes hot.
  4. Dip hands in water or put some oil on them and take a little ball of dough and make a hole in the center and stretch it to make a ring.
  5. Put the ring into hot oil until fried.
  6. Repeat the process with the remaining dough.
  7. Put sefenj in paper to drain (dust them with icing sugar if you like them sweet).

Serve them hot with tea.
